Probably the most common way to do this is using a envelope follower.
Basically a fast rectifier followed by a filter.
You should be able to find plenty of examples on the web.

Personally I like to feed the output of a env.follower into a comparator
and use the comparator output as gate for a Attack-Release type
envelope generator.
This 2 stage approach works quite well with percussive sources.
