The Fatman is a very good kit for a beginner. It comes with all of the
parts you'll need, and the instructions are reasonably detailed. The
resulting synth is perfectly usable, within it's limits (sawtooth waves
only, the oscillators soft synch when tuned closely, somewhat limited note
range, exponential CV output). The fact that includes MIDI at that price is
also pretty cool.

You can modify it to get around some of those limits, too. You might search
for Scott Gravenhorst's web pages to see the potential.

There are many other folks offering synth kits, but I'm not aware of any as
complete at the Fatman. You might check out their pages for an idea how
they compare. A couple off the top of my head:
www.synthtech.com
www.blacet.com

Several DIYers also offer circuitboards for modules (or even whole synths).
They'll expect you to source most of the other parts yourself. Gene Stopp's
ASM1 board would be in this category, as would Tom G's & Tony Allgood's boards.
