For one-offs, stripboard or vectorboard depending on what you like and
what you find easy/convenient and at the same time functional.  Some
people also like to etch their own PCBS, even for one-offs.

I use stripboard and point to point soldering (24 gauge telcom wire).
Planning takes much of the mess out of this method.  One thing I like
about stripboard is that it's pre-etched format emulates a solderless 
breadboard where I do most of my initial design prototyping and testing.
