Another vote from me for DSP.
It has serial ports suitable for ADC/DAC, can sample at any
very high speeds, are fast enough and have several kB of
internal memory.
All they need is EPROM with firmware. Although there should
be some flash devices already.
Be prepared for 0.5mm pin spacing TQFP tho...
