For that purpose I use telecom solid wire. It can be nicely
formed and stays in place. If my panels wouldn't be attached to PCBs for good, I'd use stranded wire.
In my designs I did everything I could to avoid as many wires as possible. This way my pots are sitting on PCB, and only wire needed is for toggle switches (and that will soon end) and to jacks.

If 1-PCB design can't be used, I'd recommend making smaller
PCBs only for pots and stuff like that, and connect them to main PCB via ribbon cable with IDC connectors.
