You usually can do alot if not almost all stuff in two channels. Go for that.
Me, being a gear-head and general measureamaniac, find reasons to use up more
channels. On rare occasions in my synth-DIY activities I've found it imperative
to have more than two channels, but you usually can do it with two but with a
little extra work. However, then we are into the obscurities and rare
occasions. Most people will have a hard time figuring out what can't be done
with two channels so that's definitly your option.
Single-channel is however too limited. It's good to be able to do before-after
testings and two channels is needed and usually not more than two channels.
