Sounds like you're building some sort of greenhouse controller; we've had a customer modify one of our PDK-Is for that purpose (www.pdksolutions.com) . Most of the sensors you want are pretty simple (don't know about soil moisture). Ethernet and USB can be complicated but there are modules that would simplify things.
