Jay, I would recommend Al William's book, _Build Your Own Printed Circuit Board_. This book will show you how to use Eagle and gives some of the details on board layout basics that often get overlooked. It won't teach you everything about layout, but it's a good place for a beginner to start. It's available from Amazon.com at a very reasonable price.
