LabJack looks really neat.   it solves some problems but, is not hte
answer.

With 40 points, it would need more than one unit.

Also, it does not do the data logging and/or storage.

What is desired is to have a unit that can be placed in the field and
all the sensors wired up.

then someone comes along and flips a switch.  The data collection begins.

then, a day or week later, someone flips th switch off and either
pulls the memory or whole unit and plugs it into a PC or Palm-Pilot
and downloads the data.

It's not the the data set is that massive, but it does use more than
can easily be stored on a memeroy chip.   AND, even if one were to
store it on a chip, it needs to get pulled into that Palm or PC. 
ideally, there would be no software for that, the PC would just
transfer the file.
