Well i don't know how big or small are the sysex strings of the 
evolver but logic can record also sysex data as knobs movement
not only MIDI CCs so just try once and see if it works or not 
and check out the Event list window. 
Some older synths sysex strings are huge and slow but hopefully the evolver
doesn't send that many data.
