yeah, recording sysex controller data into sequences like you would
normal midi CCs is no problem, you should even be able to over-dub
different controllers at different passes, no work-around necessary. 
remember, MIDI is ssslllloooowww by today's standards, too much data
can mean inaccurate timing and i suppose you could crash something, so
save stuff as you go.   i believe sysex data is not channelized,
something to keep in mind if you are chaining Evolvers.
