i was quite new to sysex messages before getting my evolver.
in my case, i found that monitoring MIDI messages from the evolver
with a MIDI utility like midiox helped me out a lot.
i started simply: tweak the knob, copy sysex string, tweak next knob,
etc...

that way i was able to make myself a list of all complete sysex
strings for all controllers in the evolver.
just by going through this process helped me understand how to
decypher MIDI implementation charts.
hope this helps you out.

there's nothing really complicated and whatever knowledge i lacked i
easily found by searching google.
a useful hint: most MIDI charts are written in decimal whereas sysex
messages must be programmed in hexadecimal. you need to convert
whatever value from the manual to hexadecimal. you can easily find
converters on the web. that was the biggest hurdle i crossed when
trying to work this out.
