The Evolver is easy to use with wind controllers once you get your head wrapped around it. Breath input is labeled on the front panel. That input is filtered for smooth response. There are also filtered modulation and aftertouch inputs. You can also use its four assignable mod sources for breath routing, though those are not filtered (MIDI 0-127).
The Swana "Breath of Evolver" patches available several years ago assigned either the breath input or mod sources to individual oscillator levels or all the oscillators at once, as well as sending breath to noise and/or filters. The four oscillators are set to 0 (they're controlled by breath as noted).
The other way I've found is to set the Evolver's "VCA Level" and "VCA Env Amt" to zero, then send the breath input to the modulation source "VCA". Set the individual oscillator levels to taste. Make sure the wind controller is sending out breath and volume.
The second way may be the only way to control the Mopho since it does not have modulation destinations for the individual oscillator levels but (from what I can tell from the docs) has the VCA mod destination.
If you get an Evolver, by all means hook it up to a keyboard and go through "The Definitive Guide to Evolver," then go back to the windcontroller and apply what you've learned:

There are also two Yahoo groups for windcontrollers, "akaiewi" and "windcontroller" (the last is run by "Patchman" who has a windcontroller business and a website with a forum for all windcontrollers, not just the Akai).
