I've forgotten more about the Yamaha kits than I have any prospects 
of regaining.  But I can tell you that you can adjust volume not only 
on individual pads but also in a global setting buried somewhere else 
in the menu system, depending on which version you have.  Settings 
other than volume can affect loudness, too, like gain and resistance. 
If I'm not mistaken, some of the voices are also weaker by nature 
than others.  But, all in all, you should be able to squeeze more out 
of what you have.

So far as losing your GM voice when you save a kit, since the note 
numbers assigned to kits are determined by the particular pad within 
the kit, not by the particular voice, the kit may default to a 
standard voice when saved. I'm not sure. Sometimes you have to assign 
an unused note number manually to a voice to make it stick on that 
pad. If I could recall how to do it, I'd let you know, but maybe one 
of the more current members will set you straight--if that's even the 
problem.
