Multiple Midi Channels?

I was hoping someone here could tell me if it is possible to set up a kit that triggers different midi channels simultaneously.

for example,
Kick = Midi Channel 10
Snare = Midi Channel 1
Hi-Hats = Midi Channel 2
Toms = Midi Channel 3
Cymbals = Midi Channels 4

Or am I stuck with channel midi channel 10?
