Digital BW, The Print

Hey guys and girls, sorry if this is a really novise sounding
question...but when I scan my negatives in (35mm, B&W) at 2700dpi (canon) I
get a really high pixel, but very little printable file.  I was wondering if
anyone would care to share their resizing methods with me since I am having
quite a hard time doing it so that photoshop doesn't just choke up on me.  I
would like to print on 8 by 11 media.  Thank in advance, take care.
