There are Thousands of tutorials on the web for photoshop. Most free. Go to Google, and type in "Photoshop Tutorials" Give yourself about 5
or 6 months to go through them....

There are many excellent books.

Martin Evening's Photoshop 6 for Photographers
John Paul Capinigro's book on Photoshop for Photographers
Katrin Eismann's Photoshop retouching. (one of the best books on photo shop there is).
Real World Photoshop by Frazer and Blatner. (Bruce Frazer frequents these lists).
Photoshop Aristry 6 - Excellent book, slightly advanced.
Photoshop 6 Bible by Deke McCleland.
Down and Dirty Photoshop Secrets
Photoshop 6 studio secrets
Adobe's Classroom in a Book

Plus about 165 more books on photoshop currently in print....
