What is your favorite paper and ink combo and why?

What is your favorite color overmat?

I just visited Yosimite for a couple of days and took a quick peek 
at the Ansel Adams Gallery, I would love to be able to get the same 
blacks that they do using Ilford Multigrade paper. Can we even get 
close with our matt papers? 
By the way the stroll to the top of Yosemite Falls is worth it. I 
have been trying to get some decent pics using a Infrared filter, 
some of my shots are Ok! Just need to get the right ink/paper combo.
