Digital BW, The Print

I am new to BW inkjet printing. Can anyone help me get my Mac 
and Epson 875 converted to BW? I also have access to Epson 
740, 3000 and Pro 5000 printers if one of these models would 
be better suited for BW.

I'm looking for ink set and workflow recommendations. 

Any other BW inkjet advice is welcome.
