Digital BW, The Print

I have been a user of the PiezoBW software with the original inks as 
well as the MIS FS ink set. I recently received an evaluation copy of 
Image Print. I print on an Epson 3000, which this software supports. 
I'm a bit puzzled over how to set it up to print B&W images though. 
There seems to be no mention of B&W in the PDF. Can anyone help me 
out? Secondly, I still have very little idea as to the cost of this 
software should I decide to purchase. Lastly, does anyone know if 
the "NEW" Dither is on the Demo disk, and if not, can I download it 
and incorporate it into the installed demo to test drive it before I 
decide yes or no to it.
