Digital BW, The Print

Hello all, this is my first post on this list, seems like a great 
community. I am new to B&W inkjet printing, although I have been 
printing color inkjet for the last five years.

I have an Epson Pro 5000 that I would like to use for B&W printing - 
possibly variable-tone since it is a six-color printer.

Is the Epson Pro 5000 suitable for this task? How would one adapt 
Paul Roark's MIS VM workflow - is it a manageable procedure?
