OK, I will offer the opposing opinion.

Save the Epson carts for the unlikely event you sell the machine, or if you
have to send it for repair. I have set up five 1160's (for myself & a
company) by bypassing the OEM carts & installing CIS/CFS straight away, &
never had a problem.

One strong argument for this method - you have to disassemble the Epson cart
clamping mechanism before installing the CFS. Especially if you have no
experience, this can be a frustrating, time-consuming task if you want to
save the parts & not break them. This time spent can allow the heads to
start to dry out, or allow an air bubble to form inside the head. Either
condition can cause a major headache! Always change carts quickly if you
can. If you do this procedure before installing any carts, it won't matter
how long you spend, because the heads are initially dry anyway.

A CFS tip - avoid the temptation to rush the CFS carts into the machine.
After filling the carts, allow them to "rest" overnight. I prop them on a
pen/pencil so that the ink can settle toward the ports.
