My family had an Airstream parked at Laguna Beach -- my youth beach house --
for years.  While those are usually left with their aluminum silver, the
company recommended epoxy paint to protect the trailer.  So, it was painted
with Epoxy white paint.  It was incredibly tough and looked new for years.

In building my darkroom epoxy paint was again recommended for the counter --
but it might be more brittle in a thin coating than ideal, so I used latex.

I use epoxy a lot in making my own equipment cases, etc.  Most of it seems
to yellow badly in sun.

So, it may take a search to find an epoxy that is appropriate for a
coating -- brittleness, correct viscosity, yellowing are all issues I'd want
to have some assurance on.  However, it is one tough substance if the right
one can be found.  I'd surely include the 2-solution paints in a first
screening search.

Coating should definitely be pursued.  It may be part of the formula.

  Did you use an oil-based or water-based poly? My understanding is that the
  water-based finishes show only minimal yellowing.
