I would expect a smooth rod to cause all kinds of problems such as areas with almost no coverage and a large pool of material being forced ahead of the rod. The grooves are actually good practice. The main issue is the leveling properties of the coating material. The Mayer rod would push excess material ahead of it; however, the groves allow sufficient material to get under the rod. During setting and drying, the material should flow together into a smooth, uniformly thick layer. This is the technique used when plywood panels are coated with epoxy to waterproof and stabilize the top ply. In fact "WEST" (a epoxy system used in wooden boat building) sells spreaders with notches cut in the edge just for this purpose.
