Best place to start is to see how other folks have constructed RGB partitioned workflows for the Epson driver. Especially look at the individual R,G,B curves--these are the heart of the workflow because they control the individual inks. Lots of places to download, but a good one stop shop would be the MIS website at www.inksupply.com/index.cfm?source=html/workflow.html An outline of how the 1160 RGB Partitioned workflow was developed using a scanner is in the Files section Files>Ink Sets>MIS>MIS FS, profile_make2.pdf.
