Digital BW, The Print

I'm thinking about trying the MIS inks on my 740 but I have three
questions:

1.  Do I really have to have Photoshop?  I do a lot of my editing in
another program that works well and I don't own PS.

2.  If I want the most neutral black with the least metamerism possible
which set should I order?

3.  If this is a big failure, will my printer return to normal once I
pull these cartridges out and put the color carts back in?
