Digital BW, The Print

Hi All,
I'm new to this group, and really new to digital photography, I'm interested in learning more about getting good results with B&W, to date im not happy with the printed results, Ihave a new Canon S820 printer. and yousing ps7 as my dark room 

how should I be changing my images into monochrome ? to ate im going to grey skail, but im not convinced this is the best method .

Are there better inks to go in my s820 for printing , im still yousing the supplied ink still.
