Digital BW, The Print

I downloded the curves for the Epson 7000 off of the MIS website.  I will be using the UT 
ink with Eboni Black.  How do you establish a mean starting point for applying the curves?  
When I load them into my images they look completely off, no blacks and blasted whites.  
Is there more information on the web someplace?
