In theory B&W from color could be better, or at least easier. Certainly easier to select a "red flower" for ex. while it is still red. And you can apply color filters (deep red for sky) post exposure, etc. All that being said, I haven't really tried it much. Don't know about grain (or equivalent in color), resolution, etc. Need to be really careful how you "remove the color though" so as not to lose mood and impact.
