Digital BW, The Print

I have finally set up my CFS system on an Epson 1160, running the latest version of OS X. 
When I select the printer in the printer utility, the "utility" box is greyed out. I cannot print 
a nozzle test or run a cleaning cycle. There is a lot of clear space in the tubes. The center 
two are not printing anything at all.
