The levels clips off the ends of the scale.  The curves just compresses
those tones.  So, I use levels to "fit" the image data to the full 256 (if 8
bit) range -- something that should be done in the scanning stage.  I use
the curves much more when I want to alter the contrast without blocking up
the shadows and blowing out the highlights.
