Typically digital cameras, use a technique similar to removing the color in PS. It's a linear process. If you look at the response curve of B&W film, it's not linear, it often looks like an S, it better method, is to take the photo in colour, but think B&W, then later match the response curves to your favourite B&W film, then remove the color, you will get a more likeable result.
