I use channel-mixer in Photoshop. I don't know if elements has that function. If you just use the greyscale feature, you might be able to do some adjustment using Levels. (I always do some tweaking with level after channel mixer anyway). (If you search the net, there are plenty of ways to convert an image to B/W. From GreyScale command to Channel-Mixer to Plugins..)
