Jane You're going to get a whole bunch of different answers ranging from stair stepping in Photoshop (bicubic smoother in 5% increments) to Genuine Fractals to Photozoom Pro. At the end of the day its interpolation mathematics and which process or algorithm produces the best results. The "latest technology" is definitely Photozoom's patented s-spline algorithm but their product is relatively expensive.
