Olivier- It wasn't clear to me if you were actually asking whether to use perceptual or relative with the Create ICC profiles letting PS manage color. The answer is, use perceptual. I have never found that this gives a very convincing soft proof (the weakness of the black is exaggerated in my soft proof setup), but it gives a very convincing print and one learns to use the soft proof.
