Digital BW, The Print

I noticed on the MIS site that there was mention of "start" with a
grayscale image.  

Does that mean convert the color image to grayscale in Photoshop CS,
then do all the adjusting you can to make it a great shot, then
convert to RGB before applying the curve?  I'm guessing here, but I
would not think that "start" means to shoot in BW mode on the camera,
right?

Or is all this stuff not needed anymore.  I notice Paul has other
workflow notes that don't even mention starting with grayscale at
