Digital BW, The Print

Hi Alistair:
In PS CS2, under File>Print With Preview, click on More Options (right side 
of box). The additional dialog that drops down will include Options. Under 
Options, click the Color Handling down arrow and select Let Photoshop 
Determine Colors from the choices. THat should do it.

Sorry about the simple question but can someone tell me how to do this?
I want to try non-Epson papers and cannot see where I can disable color
management by the printer.
