Any clear varnish dispersion with water will look white 
(same reason milk does), not opaque white though.
So a clear (aliphatic) urethane dispersion will look similar 
in color. I have a UV curing version of the last and it is 
white in the can. Can't be used for absorbent inkjet papers 
though.

Quite often copolymers are used so acrylic doesn't tell all, 
in silkscreen printing you will find acrylic dispersions 
with (butyrate) styrene components added. Cheaper but more 
prone to yellowing. Acryl + urethane isn't uncommon either.

Ethyl acetate but Amyl acetate even more have a sweet smell. 
Used as sweeteners in food and both are mild solvents for 
acrylics. Chloroform is a better solvent for acrylic but not 
recommended :-)
