Check out "From Camera to Print" at www.luminous-landscape.com. It's a multiple-hour tutorial that steps you through taking your images from the camera and making fine art matted and framed prints. There is a chapter dedicated specifically to scanning negatives. Definitely worth the money for the tutorial.
