Digital BW, The Print

I'm just getting started with the digital darkroom.  I just ordered 
the Canon FS4000 scanner, and I have an older Epson 750 printer (will 
update printer when Epson announces a new model).  Currently I have 
the MIS Quadtone Inks installed on the printer.

Since I'm just learning all about the b&w (and eventually color) 
process, what capabilities does my Epson 750 possess?  Also, for 
learning purposes only, what would be a good paper to use with this 
printer?  Are they any special drivers (b&w and color) that I should 
download?
