Digital BW, The Print

Hi!

I am yet to start in this adventure of making digital B&W prints; I 
have an Epson Stylus Photo 780 (790 in europe) and I´d like to ask 
all of you:

1st: Should I get FS or VM inks?

2nd: What kind of workflows can I use for this *not so popular* 
printer (at least in terms of B&W printing, I guess)?

3rd: Papers: I´ve heard the inks work best with non-glosy paper. Is 
this correct? What kind of Epson paper is mostly recommended?

Thank you all very much and I hope my B&W prints start doing well 
from the start by sharing all the knowledge that goes around here!:)

(I live in Europe so I have the extra trouble of ordering it from 
the US)
