Curves for the 7000 on a MAC

Greetings, I'm a Newbie to Hextone printing...Just purchased another Epson 7000 and am dedicating it for the VM HexTone inks from MIS. Got a defective black cart from MIS, but they replaced it in record time...no clogs and tones look pretty good. The prints are really on the dark side when printing on EAM. Seems there is not a lot of separation in the mid-tones when I print a stepwedge. All of my settings are per Mr. Roark's instructions he sent me for the 7000 using the cross-platform curves. The MAC only curves are just about the same. Is what I am experiencing typical? If so, where do I begin my curve-tweaking process...in GrayScale or RGB? Also, once I get EAM properly zeroed-in...will I have to zero-in other papers as well?
