Dumb question?

I print with an Epson 1280 Hextone inks and use Paul Roark curve for cool neutral. The way I calibrated the monitor and printer was to take a 21 step grayscale on the screen and with a curve layer match the percentages of the steps and printed that out. It matched just right after applying Paul Roark's curve. The dumb question is--Why do the percentages change so much on the image on screen and yet match so well in the finished print of it. I know the screen image is false colors, and that may be the answer to my question. I would welcome any and all input in order to understand better the connection between the false screen image and the printed image. I'm satisfied with what I do, I just would like to know why.
