I'm going to wait for the newly announced Oly E-1 as I have no
"legacy" Canon lenses to use, but the Canon 10D is a fine
choice. I'm sure you can get much useful info on this list,
however I suggest you also might look in at a dpreview.com
forum devoted to the topic "Canon SLR Talk" (digital, of course).
You have to register to post there, but it will be an excellent
source of info on dealer reliablity and accessories, etc.

I don't know specifically about the Sandisk 1 gb card you
mentioned, but beware that Sandisk has frequently been among
the very slowest CF cards of the bunch in head-to-head testing of
speed.
Also beware camera dealers offering hard-to-believe lowball
prices on cameras in short supply (as I think the 10D still is).
The dpreview forum will probably be able to give you feedback on
that.
