Although the 3800 doesnt accept rolls of paper, isn't it possible just
to get around this by cutting up a roll and feeding it manually into
the printer? Isn't it possible just to set a custom paper size in the
Epson printer driver?

If this would work, I will probably buy one.

Hi

Permajet papers have been available in A2 sheets for a few years now - see
http://www.permajet.com/html/products_paper_range.html

I suspect most other manufacturers will follow suit if the 3800 sells, as I
expect it will. I use Permajet Delta Matt in my 2100 at present, and I'll be
first in line for a 3800.

I don't see why not. This doesen't appear to be a "production" machine. The advantage for roll paper, besides cost, is you can print unattended. I like the idea of not having to switch carts to print gloss/semi gloss material. The downside to cutting up rolls is you have to flatten the paper prior to printing and the time spent cutting down the roll. Time being money, I think I'd just buy the precut paper.
