You can use PrintFIX PRO as you describe with UT-3D inks, and the RGB driver. 
Or you can use them with QTR, and use CreateICC to build your profiles, 
measuring for them with PrintFIX PRO's measure tool, but not building the profiles 
in PrintFIX PRO. These are two seperate methods. To mimic tints or crosstones 
using PFP and the RGB driver is fairly straightforward. I can't comment on the 
process of creating custom tones curves in QTR.

I have one more question - does the RGB driver method use all of the
inks in the set?

Yes, though the amounts it uses of each depends on the tints you choose to 
print...
