Why do profiles differ?

I am wondering why profiles, whether they be Lyson, Cone or someone elses vary from setting to setting at all? I've tried these different settings of space tonight all on Arches hot press... Lgn watercolor Charcoal Sommerset velvet Epson Photo Quality. Some are Lyson profiles, some Cone. All have a similiarity to them but Epson stuff tends towards green, Cone's a touch red, and Lyson perhaps more neutral but still very warmed. I am using Lysonic E color inks and making greyscales with them. Printing in RGB vs. a greyscale image isn't a significant shit either. Epson 3000. What are these things telling my computer?
