You always hear "artifacts of the clock" if you do bitcrushing. It is 
the basic principle of s&h bitcrushing to make the s&h clock hearable as 
level steps.

To my taste the Doepfer S&H works fine as a bitcrusher.

If you want to play with drumsounds and bitcrushin/digitizing, think 
about an Alesis bitrman (or a Alesis Ineko, which incorporates the 
bitrmans effects). This is one of the most incredible tools to torture 
drumsounds!
