You mean the box would sample CV and convert it to an OSC message in the 
computer? That makes it a bit more complicated. Do-able, but more 
complicated, depending on how many channels in and out together you need.

Most microcontrollers have a limited number of analog channels, and also 
a much more limited number of cycles with which to do all the 
calculations. What could keep it reasonable is that you could configure 
in software each channel of the converter to be an input or an output, 
the way the Arduino does.

But yes, there will be some latency with any computer controlled system, 
which would be increased by expecting simultaneous digital in and out.
