I am using OmniGraffle pro. Which is quite fast once you've set up a set of 'stencils' as they call it. http://www.omnigroup.com/applications/OmniGraffle/ (Mac only I believe) The final results look very good. The program is very flexible and usable for other creative tasks. I even managed to do some interior design preparations for my living room with it.
